Feasting on Romantic Comedy – Grilled Cheese Sandwiches from Royal Wedding by Meg Cabot

Mia Thermopolis, once a normal girl from New York, found out as a teenager that she was, in fact, not normal at all. She was Princess Mia and heir to the throne of Genovia.

Her struggle to adapt to this news is well documented in not one, not two but ten volumes of diaries about her life. She talks about her friendships, her life at school, her struggle with algebra, her hated Princess lessons with Grandmere, and Michael, brother of her best friend Lilly. If only he would notice her.

But now, in the novel Royal Wedding, Mia is no longer young adult. She is in her twenties. Michael has been her boyfriend for some time and soon he is going to pop that all important question. But despite her wishes for a quiet wedding with a few friends, Mia knows that when the heir to the throne of Genovia gets married it is a Big Deal. 

And there is a slight (understatement) disagreement between Mia and her Grandmere over the details of the wedding. On this Pinterest board you can see the choices Grandmere has for wedding and bridesmaid dresses and what Mia herself would prefer. Grandmere is a strong woman. And you just know she is going to get her way on many things. 

One item Mia did get her way with, however, is (some) of the wedding food. Specifically grilled cheese sandwiches. Who wouldn't want grilled cheese sandwiches at a wedding? Especially if served with champagne…

Frying pan

Ingredients

Two slices of bread

Butter

Handful of grated cheese

Method

  1. Melt the butter in the saucepan.
  2. Add the bread slices and toast one side.
  3. Cover one of the slices with the grated cheese.
  4. Allow the cheese to start melting then add the second slice on top. 
  5. Flip over and allow to cook on the other side.
  6. Serve. Princess style with champagne.
