Sunshine? Check. Spaniels? Check. Sunshine and Spaniels is the second of the novellas from the Primrose Terrace series of books by Cressida McLaughlin (Wellies and Westies is the first one in the series). But I'd like to add a few more words beginning with 's'. Sunshine, spaniels, sundaes and sprinkles.
Cat's new dog walking business, Pooch Promenade, is going down an absolute treat. She's busy busy busy looking after and walking dogs and drumming up business in her local park. However, Cat being Cat, she still has time for others. Some might say she's interfering. Others might say she's being neighbourly. Whatever their views, you cannot deny her heart is in exactly the right place.
In this particular instance Cat is concerned about single mum, Frankie, who also lives on Primrose Terrace. Frankie has three children: Emma, Lizzie and their baby brother, Henry. Frankie is put into a tricky position so Cat offers to help look after her children. She is a trained nursery nurse after all. So, along with her friend, Polly, they take the children and dogs galore down to the beach for a walk, a splash and a sundae.
Banana split with extra pistachio ice-cream especially for Polly to be shared with Cat, knickerbocker glory for Lizzie and, for Emma, a waffle with chocolate sauce. With sprinkles. Lots and lots of sprinkles.
A waffle with ice-cream, chocolate sauce and sprinkles is not a difficult recipe. You can buy all the ingredients from the supermarket. However, I do like to make my own chocolate sauce. It's a lot nicer than shop bought. Recipe for Chocolate Sauce to Pour Over Waffle and Smother in Sprinkles
Equipment
Saucepan, microwavable bowl
Ingredients
30g dark chocolate
30g milk chocolate
20g butter
130ml double cream
1 tsp sugar
Method
- Melt the chocolate together in the microwave.
- In the saucepan add the butter, cream and sugar. Bring to a gentle boil.
- Pour over the melted chocolate and stir.
- Pour over waffle. That's it!
