Just get something down on paper. You can always edit (delete) it later.
Become familiar with the 'notes' app on your phone, or keep a pad and pen by your bed. so you can jot stuff down when it occurs to you. Many's the bestselling book idea/killer piece of dialogue I've forgotten by not doing this.
When writing dialogue, read it out loud. If it doesn't sound right, it isn't.
Read the bestsellers in your genre, and see how they achieve their page-turning quality.
